Mushroom Egg Rolls


My children LOVE Chinese food, especially egg rolls. Tonight was Chinese take out night at home. I made Sriracha Roasted Tofu with Rainbow Veggies , miso soup with Ramen noodles added and these easy egg rolls for dinner. We all ate with chopsticks and enjoyed a Chinese meal at home. 

These egg rolls are so easy to make. You could definitely serve them as an appetizer or to accompany your favorite Chinese food. 


Recipe:

1 ( 14 oz.) Bag of Cole Slaw veggies... (if you can't find these, use 4 cups shredded cabbage and carrots)
8 oz. Finely chopped mushrooms 
1 Tbsp. soy sauce 
1 Tbsp. avocado oil ( any oil will work)
1 Tbsp. sesame seeds 
1 tsp. ground ginger
Oil to fry
8 (egg free) egg roll wrappers 

Method:

1. Heat Cabbage, carrots, mushrooms, soy sauce, avocado oil, sesame seeds, and ginger in a non stick pan over medium high heat until tender 

2. Heat frying oil in a skillet over medium heat. 

3. Place 1/8 of the filling in the middle of an egg roll wrapper. 

4. Fold both sides in and then roll up like a burrito. Seal the end with a little water.

5. Repeat until you have 8 egg rolls. 

6. Place egg rolls carefully in your heated oil & fry until golden brown. 

7. Let egg rolls cool on a paper towel for a few minutes before serving. 

Makes 8 egg rolls.

Vegan Cabbage Rolls with homemade spicy, smokey tomato sauce

Cabbage rolls are such a simple meal. They are easy to make & a common dinner  in most homes. These are a little different than the cabbage rolls your mother used to make. I top these cabbage rolls in my homemade tomato sauce that's a bit spicy and smokey thanks to the paprika in my recipe. There are a few ways to customize this recipe. If you don't like it spicy, use plain diced tomatoes. Make it your own! 


Recipe :

Tomato Sauce-

Olive oil 
3 Tbsp. diced onion
1/2 cup veggie broth 
1 tsp. smoked paprika 
1 (14 oz.) Can of diced tomatoes with green chilies (use plain if you don't want it spicy)
1/4 cup tomato paste 
Salt & pepper to taste 

Cabbage Rolls -

8 cabbage leaves
8 oz. Mushrooms 
1 small red pepper, diced
1 small purple onion, diced 
2 cups cooked quinoa (or rice)
1 tsp. Italian seasoning 
Salt & pepper to taste 

Method :

Preheat oven to 350°

1. Prepare the cabbage leaves:

Remove tough stem from cabbage leaves with a sharp knife and steam for about 6-8 minutes until softened, but not mushy. Don't over cook the cabbage. It will cook some more in the oven. You just want it soft enough to work with when stuffing & rolling the cabbage. 

Set cabbage leaves aside to cool.

2. Make the sauce:

 In a skillet over medium heat, sautée 3 Tbsp. of onion in a bit of olive oil until soft and translucent.

Add diced tomatoes, tomato paste, veggie broth, paprika, salt and pepper. Heat through. 

Add warm tomatoes to blender and puree until smooth. 

3. Prepare the filling:

Cook mushrooms, onions and peppers in a skillet over medium heat with Italian seasoning.

Remove from heat and add quinoa (or rice) & 1/2 cup of tomato sauce to mushrooms . Mix well. 

4. Assemble:

Place 1/8 of mushroom & quinoa on each cabbage leaf.

Fold both ends of the cabbage over the filling. Roll tightly, like a burrito, sealing off the filling. 

Place cabbage rolls into a greased casserole dish and top with sauce.

5. Bake:

Bake 20 minutes. 

Makes 4 servings.

Cabbage and Bean Soup

This recipe has been a family favorite since I was pregnant with my oldest child, who is now almost 21. I craved this soup every day. I had to learn to make it or I would go broke eating at the local restaurant which served it along with garlic cheddar biscuits. (Recipe for the veganized biscuits can be found Here) This had to be veganized because it was an important part of our family's history.

This soup is easy to make & inexpensive to feed a crowd. That was a must raising 4 children. I would not post it until I got the seal of approval from my husband that it was good enough to be called "Cabbage and Bean Soup" and published. I hope this soup will keep you warm in the coming Fall months and become a family favorite in your home.

Recipe:

1 (12 oz.) bag of veggie crumbles (vegan hamburger) *
Olive oil
1 Tbsp. cumin
1/4 -1/2 tsp of red pepper flakes (optional, but recommend)
2 (32 oz.) Mushroom broth**
1 tbsp. soy sauce
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. smokey paprika
2 (15 oz.) Red kidney beans, drained and rinsed
1 small cabbage, chopped
Salt & pepper to taste

Method:

1. In a stock pot, brown veggie crumbles over medium heat with a little olive oil until browned.

2. Add Mushroom broth, soy sauce, red pepper flakes, paprika, cumin, garlic powder,  onion powder, beans, cabbage to your pot. Add salt & pepper to taste.

3. Cover and cook about 30 mins until cabbage is softened.

Serve with vegan garlic cheddar biscuits or vegan cornbread for a hearty meal.

Makes 6 -8 servings.

* you can use 8 oz. Finely chopped mushrooms if you don't want to use "fake meat".

** vegetable broth will work fine if you can't find mushroom broth.
