Vegan Taco Tuesday

Happy Taco Tuesday! We all love a good taco & I especially love a healthy taco that makes my family happy. This is a simple way make a cruelty free taco that's still filled with a "meaty" filling and lots of fresh veggies. Hope your family will enjoy it as much as ours!

Vegan Taco Recipe:

2 ( 15 oz.) can of pinto beans
1/3 cup of corn kernels
1/2 small onion, chopped
4 baby carrots
1 handful of kale
1/4 cup sunflower seeds
1 Tbsp chai seeds
1/3 cup nutritional yeast
1 fresh jalapeno
1 Tbsp cumin
1/2 Tbsp garlic powder
1/2 Tbsp paprika
1 tsp chili powder (optional)
salt & pepper to taste
10 taco shells
Your favorite taco toppings

In a food processor, pulse corn, onion, carrots, kale, sunflower seeds, chia seeds, Nutritional yeast, jalapeno, cumin, garlic powder, paprika, salt & pepper, & chili powder until very fine.

Put into a pan over medium heat and let cook through while preparing your pintos.

Drain 1 can pintos over a bowl and reserve 1/4 cup of liquid.

Add the 1 can of pintos and reserved liquid to the food processor and pulse until smooth. Add to pan.

Add remaining can of pintos (drained well) to veggie mixture in the pan. 

Stir to incorporate and cook 10 minutes.

Fill taco shells with pinto. Top with favorite ingredients and serve.

Makes 10 servings.
